Modern Cakes!

Hi guys, well today i finally got to download the pics of my phone, i have been with a cold and haven't been feeling so much.. i haven't been so productive either... okay so laste weekend i had the birthday celebration of a friend and i asked him what sorta of cake he liked.. he told me he wanted vanilla, but i decided to give it a bit of a twist and cover & decorated it with some chocolate ganache and chocolate shapes. Here's a pic of the cake: 

I'm sorry the pic is not very good. I didn't have a good camera but the one from my phone and at home i had some problems tempering the chocolate for the figures so in the end i had no time to take good pics!
Since i learned the classic way of temperin the chocolate on the marble table and all that, i found myself experimenting with new techiques of tempering the chocolate which in the end didnt work a lot because i did get the figures but they would melt if you touched them!!! arrrgg  In the end the caked looked really pretty..i know for some this type of "modern" desing in cakes is not very appealing but i find it nice. Basically for this cake i did some chocolate triangles springkled in non-toxic gold dust in different shapes and put them on the middle of the cake. Here's another view of the decoration: 


Okay just to finish i just wanted to show you a small photo of a small modern wedding cake i did a while ago, using this same modern abstract tecnique in cake deco.

Some christmas Goodies!

Okay, I know Christmas has passed already but i thought it will be nice to show you all some of the Christmas cakes and breads i have done in the past. Enjoy!







These were some small fruit cakesi made to sell for Christmas to give out as presents. In know they have a rustic look to them, but they were so yummy! I think the boxes made a nice touch. :)





This is a small New Year's Cake. I based myself on a small christmas decoration to make the reindeer. Everything is made up by hand in fondant.

Finally this year i tried making a new thing: I looked up for a spanish recipe on the "Roscon de reyes" which is basically a sweet bread, decorated with dried fruits and sugar. I decided to make it with a twist and put into the dough some pieces of "oranges confites" (confited orange peels) and it was so yummy! This bread is part of a celebration in the 6th of january, where the three kings came to visit baby Jesus!  I hope you like it and until next post! :)

Hello Everyone! Bonjour tout le monde! Hola a todos!.... How it all began...

This is the first time i decided to write about one of the things i like the most: Baking. It has been an unknown passion for me for many years, finally in 2010 after starting my 30's crisis.. i finally took the guts up to say i was going to be a "Pâtissier" (french for baker). I decided to enroll in a mainly french pastry and bakery course to learn all the "good" tecniques of this beautiful art, the art of Pâtisseries.

The first memories i have of any pastries or baked goods, where the birthdays cakes my mom either bought for us or in some special ocassions made herself. I use to remember how nice it smelled in the kitchen while it was in the oven and how happy and anxious it made me and my brothers. We wanted to ate it all and didnt want to wait for it! 

Okay so...obviously this was not a path i chose since i was young, it has taken me years to come to realize, this is what makes me happy, makes other people happy too and i'm good at! Where i live, this is not a well paid job, and in many cases the people who do it, dont have a very professional approach on it. So my family had wanted me to be more the "office type", and i tried to do it, making myself terrible unhappy. Maybe its a bit selfish but i've always seek for something to fulfill me and make me happy. In the "office jobs" i felt trapped, anxious.. it was hell.

Finally last year after coming to a big break, as to what i really wanted to do with my life, i remembered the lessons i took with my aunt on cake decorating. I remember how happy i felt at that time and how i could use my creativity to make new things.
this is when i decided i will try to regaing those old memories and put them to some "good" use. Since then i have been trying to get as much knowledge and practice to become better in this beautiful "metier". I have to admit the year i spend in france made me realize this was an art expression, full of love and dedication. I awwed looking at any "Pattisserie ou boulanger" shop and i hope i can make the same impression on other people one day. :)

p.s. I'm enclosing a pic of the first cake i made myself.(It's actually not "the first cake" haha but the same pecan pound cake. It was a recipe of one of my Aunts and she kindly showed me how to make it for the first time! Thankyou so much! :)
